Vegan Chili

12 large Onion
1 large clove Garlic
1 tsp Oil
1 15.5oz can Pinto Beans
1 15.5oz can Dark Red Kidney Beans
1 15.5oz can Red Beans
1 15.25oz can Corn
1 28oz can Diced Tomatoes
1 slice canned Roasted Red Pepper
2 tsp Cumin
2 tsp Chili Powder
1 12 tsp Coriander
12 tsp Paprika
12 tsp Cayenne Pepper
1 cup Water
Cheese (optional)
Cilantro (Optional)


Dice the onion and roasted red pepper. Mince the garlic. In a large pot over medium heat, sauté the onions in oil for about 4 minutes. Add the minced garlic and sauté for 4 more minutes. Add the beans, corn, diced tomatoes, roasted red peppers, spices and water to the pot. Bring the heat up to medium high. Let that cook for about 10 to 15 minutes. Stir occasionally. Top with cheese, cilantro, etc.!
